Chimboricha Kalvan - Crab Curry


Ingredients:
0.75lb Full Crab
1/2 tsp each of coriander seeds, cumin seeds, fennel seeds
Pinch of clove powder
1 inch piece of cinnamon
6 to 8 peppercorns
1/2 tsp turmeric
1 cup of onion, finely chopped
1/4 cup shredded coconut
3 cloves of garlic
Salt and Sugar
Few drops of fish sauce

Method:
1. Heat oil in a pan. Add all of the following to the pan making sure the flame is low - coriander, cumin, fennel, clove powder, cinnamon, peppercorns, and 1/4 tsp turmeric and lightly roast till aromatic. Now, add the onion and coconut powder.  Add some salt and a small pinch of sugar.  Keep roasting and stirring the mixture on low flame until the mixture turns brown. See picture below. Set aside to cool. When cool, blend it with some water to make a coarse paste. 




2. In a pan, heat some more oil.  Add the 3 cloves of smashed garlic.  Add the remainder of the turmeric powder.  Add the cleaned and cut pieces to the pan.  Toss well.  Cook covered for 5 minutes.  Now add the paste to the pan. Add some water if necessary.  Season with salt and some fish sauce.  Cook covered for another 5 to 10 minutes on low flame while tossing the crab around occasionally in the sauce.  Garnish with lime juice and cilantro.  Serve with rice.

  1. mithu you're a chef! these pics are amazing and very professional looking...i enjoy cooking v much but have never tried konkan food...i would love it if you could pls send me all your seafood and kadhi recipes...especially kokam kadhi, crabs, clams, lobster, shrimp etc...:-) and keep it coming...:-)

  3. deepali - Basically if you get the whole crab, individually take out the legs first. Basically jsut twist at the joint. Now keep the crab standing up and with a mallet gently pound it so the shell loosens up. This is a smaller shell on the stomach part of the crab. pull it apart. take out the gills (I think they are gills, because they are soft and squishy! there is also some yellow/orangish stuff in there. Wash that out as well under running water. Using a scrub brush, scrub the crabs really well under cold running water. does that help?
